Delicious Dessert Alert!!!!

So I will be perfectly honest with you and say that the recipes on this blog are not my originals.  I aspire to achieve that level of culinary awesomeness someday, but for the time being I prefer the eating part of things 🙂  However, all of the recipes I post I have prepared in my sparsely stocked kitchen…if I can do it, anyone can do it!!

This little number was inspired by a friend of mine who so kindly brought this treat to class yesterday.  It made the last class of the semester much more bearable.  Thanks Crystal!!  After class I took to the world wide web to see if I could find something similar.  Alas…like an angel from heaven “My New Roots”  delivered!

Now I will tell you that when I made this recipe it looked a lot like chunky road tar placed in a cake pan, but that didn’t detract from the taste one bit!  It’s super easy and a surefire way to impress friends and family who scoff at all things healthy.




Raw Brownies


2 cups whole walnuts
2 ½ cups Medjool dates, pitted
1 cup raw cacao
1 cup raw unsalted almonds, roughly chopped
¼ tsp. sea salt



1. Place walnuts in food processor and blend on high until the nuts are finely ground.
2. Add the cacao and salt. Pulse to combine.
3. Add the dates one at a time through the feed tube of the food processor while it is running. What you should end up with is a mix that appears rather like cake crumbs, but that when pressed, will easily stick together (if the mixture does not hold together well, add more dates).
4. In a large bowl (or the pan you plan on putting the brownies in), combine the walnut-cacao mix with the chopped almonds. Press into a lined cake pan or mold. Place in freezer or fridge until ready to serve (it is also easier to cut these when they are very cold). Store in an airtight container.

Happy Holidays From Shine On Wellness

I know it sounds a bit counterintuitive, but the Holidays can be the perfect time to begin your personal path to wellness.  Start with these simple tips to make the most of this special time of year.

  1. Break out the greenery!  And I don’t mean just the Christmas tree.  When you sit down to those giant holiday meals, make sure you incorporate some greens.  It is especially effective to eat them first as it leaves less room for the unhealthier options.  (Like the delicious Green Bean Casserole recipe below!)
  2. Drink as much as you want!!…Water that is.  I can’t stress enough the importance of hydration, especially if you do enjoy a cocktail or two.  Drinking water promotes better digestion, detoxification and also helps you feel less hungry.  Drink plenty of water before (especially before!) and after meals and just little sips if any while you eat for optimal absorption and digestion purposes.
  3. Give Presence, not just gifts.  Take the time to really appreciate the holidays and everything that comes with them.  When you see your family and friends ask them how they are doing and really (I mean REALLY) listen to their response.  Sometimes just listening provides a gift beyond measure…try it and you will see what I mean!!
  4. Relax.  We all know the holidays can be a stressful time, and also a time where the focus is on everyone and everything else.  Don’t forget about Numero Uno!!  If possible do something special for yourself to help you relax.  Maybe schedule a massage (Massage therapy schools are a great way to get an affordable massage and you are also helping another person learn!  Talk about a Win-Win!!)  if a massage isn’t your thing, take a bath, take a walk, do some yoga or whatever else that makes you happy, but DO SOMETHING FOR YOU!!!
  5. Indulge…and don’t feel guilty.  This one is important. The holidays are a time when we are surrounded by delicious food and drink.  If you are going to indulge, do it but do it conciously.  If you want a piece of pie by all means eat it, but eat it slowly and really appreciate all of the work that went into making it, all of the delicious flavor, and all of the intricacies of the texture and taste.  Be just as present with your food as you are with your family (see tip #3) and that pie will be more flavorful and more satisfying than any you have tasted before!  After you have eaten don’t feel the least bit guilty. Forget about it, move on and start fresh the next day!

Favorite Holiday Recipes

Happy Holidays everyone!  It’s that fabulous time of year where eating and drinking are at the center of every gathering.  I’ve been dairy free for quite some time now and luckily my family is supportive of my eating habits, but I know that’s not the case for everyone.  People often think that special diet dishes are never as good as their full fat, dairy-rific counterparts.  I make every attempt possible to prove them wrong.  One of my favorite variations on a traditional holiday dish is this delicious green bean casserole. So if your family does things potluck style, I highly recommend bringing this little gem!

Unfortunately we ate all of the casserole before I took a picture, but you can find the original recipe with photo’s here.  It comes from another blog where I get a bunch of super delicious vegan recipes!!

2 quarts water
1 tablespoon table salt
1 1/2 pounds fresh green beans, trimmed and cut into bite-size pieces

10 ounces mushrooms
3 cloves garlic, minced
generous pinch cayenne pepper
Salt to taste
Fresh pepper to taste
2 tablespoons flour
3/4 cup vegetable broth
1 tablespoon dry sherry (Alanna’s brilliant addition)
3/4 cup soy creamer (or try full-fat unsweetened soymilk)

1 1/2 slices whole grain bread
1 tablespoon Earth Balance margarine
1/8 teaspoon salt
1/16 teaspoon freshly ground black pepper
1 3-ounce can of French fried onions

  1. Beans: Bring the water to boil in a large pot. While it’s heating, cut up the beans. Add the salt and beans to the boiling water. Cover and cook for 6 minutes. Drain beans in a colander, and then spray for a minute with cold water to stop the cooking. Let them drain in the colander, shaking every now and then to get off all the water.
  2. Sauce: Trim and discard the mushroom stems and chop the mushrooms into pieces. Spray a non-stick pan with canola oil and heat it. Add the mushrooms, garlic, cayenne, salt, and pepper. Cook until mushrooms are very soft and exude their juices. Whisk the flour into the vegetable broth and add to the mushrooms along with the sherry. Simmer, stirring, until mixture thickens. Add the soy creamer and simmer until thick, about 5 to 10 minutes. Adjust the seasonings and stir in the beans.
  3. Topping: Put the bread, margarine, salt, and pepper into a food processor and pulse until crumbly. Pour into a bowl and add the onions. Stir to combine.
  4. To assemble: Put the green beans into an oiled casserole dish and top with the onion mixture. Bake at 425 F for about 15 minutes. If you are not serving this right away, refrigerate the topping separately; bring to room temperature before sprinkling the topping on the casserole and baking for about 20 minutes or until hot throughout.

Welcome to the Shine on Wellness Blog!  It’s a work in progress so “pardon our dust” as they say.  Here you will find interesting nutrition information, favorite recipes, and hopefully a little bit of inspiration.

We believe that every person has an innate light that is just begging to shine.  Unfortunately our busy lives, social and cultural beliefs, and a lot of times negative self image have a tendency to dim that light.  When we feel suppressed the tendency is to seek out other ways to soothe and “nurture” ourselves.  Food is often the comfort of choice, but it generally has the opposite effect.  The things we eat and drink to feel better temporarily often let us down in the long run, and lead to physical symptoms in addition to the emotional discomfort we already felt.
